Peanut Butter Fudge

Do you ever wish you could turn back time and pay more attention to something?  I wish I could turn back time and ask my grandmother the secret to how she made fudge or at least paid more attention when she made it.  Maybe even snapped a photo or two.

My grandmother made this a lot and placed it on her buffet in this really pretty square glass serving dish.  The fudge never lasted long.

2 1/2 c. sugar
1/2 stick of butter or margarine
1 can of Evaporated Milk
1 Jar Marshmallow Fluff
3/4 tsp. salt
9 oz. peanut butter (creamy or chunky)

Grease a 9-inch square baking pan; set aside. In large saucepan combine first 5 ingredients. Stir over low heat until blended. Over medium heat, bring to a full-rolling boil being careful not to mistake escaping air bubbles for boiling. Boil slowly, stirring constantly, 5 minutes. Remove from heat, stir in peanut butter until blended. Turn into greased pan and cool.Makes 2 1/2 pounds.

This also reminds me of my first fluffernutter.
Somedays I really wish I could just pop one of these in my daughter's lunchbag
and send her on her way.  Whatever happened to the days where you could pack a peanut butter sandwich and your mother greeted you at the door after school?

Simply take 2 pieces of bread and spread peanut butter on one half and marshmallow fluff on the other half and press together to make a sandwich.
Great after school snack!
